  • Gluten Kabob

    Oh my YUM! You will not regret making this recipe. This is the perfect recipe for summertime BBQs. Even non vegans/vegetarians will enjoy it. Trust me. I made this for my husband, who's not vegan YET, and he absolutely loved it. You'll need the recipe for basic gluten which is also here on my blog. Click here for recipe. Ingredients: 2 cups basic gluten Click here for recipe 1/4 cup olive oil 1/3 cup soy sauce 1/4 cup maple syrup 1 teaspoon minced garlic 1/2 teaspoon salt, or less 1 red bell pepper cut into 1 inch pieces 1 green or yellow bell pepper cut into 1 inch pieces 1 small zucchini cut into 1 inch pieces 1 red onion cut into 1 inch pieces Instructions: 1. Place all items into a large bowl and toss to coat in the marinade. 2. Let it marinate for 1hour or more in the refrigerator. No longer than 8 hours. 3. Preheat grill or grill pan on a medium heat. Grill should be between 300-325 F. 4. Thread the gluten and vegetables onto the skewers. 5. Cook for about 5 minutes on each side. It usually takes 10-15 minutes total. 6. Serve hot.   • Basic Gluten Recipe (Veggie Meat)

    Homemade veggie meat. Yum. It's so delicious, simple and has great texture. It can be used in a lot of different dishes, or eaten as is. It's a great way to get some plant-based protein. Using this recipe, I made kabobs on the grill, and let me tell you it was delicious. I'll be sharing that recipe next week, so stay tuned and subscribe. Ingredients: Gluten: 2 cups vital gluten flour 1 1/2 teaspoons salt 1 teaspoon onion powder 1/2 teaspoon garlic powder 1 1/4 cup water Water: 12 cups water or vegetable broth 2 tablespoons vegan chicken seasoning 1 tablespoon salt Instructions: In a bowl add the vital gluten flour, salt, onion powder, and garlic powder and mix well. Slowly add the 1 1/4 cup water, and stir together until it forms into ball. Gently knead ball for 5 minutes. Cut the gluten into small pieces, about 1/2 inch in size. Add the 12 cups of water to a large pot, and bring to a boil. Add the vegan chicken seasoning and salt, and stir in. If you are using vegetable broth instead, use 12 cups, and disregard the salt and chicken seasoning. Add the small pieces of gluten to the boiling water. Cover pot and let it boil for 15 minutes, stirring occasionally. The gluten will double or triple in size, so make sure to stir occasionally since some pieces will be sticking out of the water. Remove the gluten from water, and serve hot. You can use this gluten for a variety of recipes: stir fry, bbq chicken, kabobs, and so much more! Or just eat it as it is. **To store gluten, place in a sealed container and add the water broth to cover gluten. This helps it to stay fresh and continue marinating in the broth water. This recipe contains 150 grams of protein. Wow. Now, please don't sit and eat all of this in one sitting. Yikes. But it's good to know that this is a great source of plant-based protein. So eat up and enjoy.

  • Green Goddess Dressing & Salad

    It's always good to have a variety of salads that you enjoy eating, and if you're looking for a new one, add this one. Besidesthe amazing flavors of this dressing and salad, it is full of nutrieints that are helpful to the body. Fiber: Each day we should be getting 25+ grams of fiber throughout the say, but most Americans are lucky to get 10 grams a dayon the standard American diet. This recipe alone will give you 8 grams of fiber, which is a good addition to the day. Protein: Even while eating a plant-based diet we can get plenty of protein that our body needs. This salad has 12 grams of protein. For the day having 50-80 grams of protein a day is ideal for most men and women. Calories: If you're needing to cut back on calories this salad only has 270 calories for the entire salad, not including the dressing. The dressing is about 60-70 calories per tablespoon. So here you have a high nutrient low calorie meal that tastes great and can help you lose weight. Dressing: Ingredients: 1 cup tahini 2 green onions, including white and green part 1 cup basil, fresh 2 lemons, juice 1 teaspoon salt 3/4 cup water Directions: 1. Add all ingredients to a blender, and blend until smooth. Salad: Ingredients: 1 bunch kale 1 cup arugula 1 cup purple cabbage, shredded 1 cucumber, chopped 1 cup cooked quinoa Directions: Chop and prep all the vegtables. Add to a large bowl. Add a few tablespoons of dressings, and mix well. Eat chilled and enjoy.

    Blueberries . Little drops of powerful energy. We've probably all heard that blueberries are healthy for us, so let's look a little bit deeper into why they're so important for our bodies. By consuming more fruits and vegetables we are already going to have much healthier lifestyle, which can help to lower the risk of many lifestyle related health conditions. Bone Health Since blueberries are good sources of iron, phosphorous, calcium, magnesium, zinc and vitamin K, this helps contribute to maintaining healthy bones. The strength and elasticity of the bones and joints is mainly in part by the iron and zinc. We all know calcium is important for strong bones, but the vitamin K helps to improve the absorption of calcium. Lower Blood Pressure Blueberries contain potassium, calcium, and magnesium, which have been found to help decrease blood pressure naturally. Plus, they're naturally sodium free. Heart Disease Preventing Since blueberries contain a good amount of fiber, this helps to lower the total amount of cholesterol found in the blood, which helps to decrease heart disease. They also contain potassium, folate, vitamin B6, vitamin C, and phytonutrients, which all support heart health. Cancer Preventing Blueberries contain various phytonutrients which function as powerful antioxidants. Antioxidants help to protect the cells against free radical damage. They help to inhibit tumor growth as well. Fights Wrinkles Our skin relies on vitamin C for collagen, which helps it to be more smooth and less wrinkles. VIDEO: Blueberry Lemon Bread Recipe: 5 tablespoons vegan unsalted butter, melted 1 cup blueberries (fresh or frozen) 1 1/2 cups plus 2 tablespoons all-purpose flour 1 cup sugar 1 lemon, zested and juiced (about 3 tablespoons ) 1 teaspoon baking powder pinch of salt 1/2 cup soy milk (or other milk alternative) 1 tablespoon Egg Replacer (EnerG brand) + 4 Tbsp water (Or you can use 2 Tbsp ground flaxseed +6 Tbsp water) Glaze: 1 lemon, juiced 1/4 powdered sugar Directions 1. Preheat the oven to 350 degrees F. Lightly oil a 4-by-8-by-2-inch loaf pan. Toss the blueberries in 2 tablespoons of the flour in a medium bowl and set aside. Beat together the butter, sugar, egg replacer mixture, lemon zest and lemon juice in the bowl of an electric mixer, or using a spoon. Sift together the baking powder, 1 teaspoon salt and remaining 1 1/2 cups flour in a medium bowl. Add the flour mixture and soy milk to the butter mixture in alternating batches, beginning and ending with the flour. Fold in the blueberries. Pour the batter into the prepared pan and bake until a toothpick inserted in the center of the loaf comes out clean, about 1 hour. Cool for 10 minutes in the pan, then turn out onto a wire rack. Directions for glaze: In a small bowl stir together 2 tablespoons lemon juice with the powdered sugar until it's completely smooth. Reserve the remaining lemon juice for another use. Drizzle the glaze over the top of the loaf while it is still warm, allowing it to drip down the sides. Serve the loaf warm or at room temperature This is the Egg Replacer that I used in the recipe. But you can use ground flaxseed if you want. Just use 2 Tbsp ground flaxseed, mixed with 6 Tbsp water.

    Vegan Cheese Sauce When I became vegan one of the hardest things to give up was cheese. Especially nacho cheese sauce. This was one of my favorite foods. If you feel the same way, worry no longer. This recipe is one of the best cheese sauce recipes I have ever had. It's a recipe that I make about once every week or two. I just can't get enough of it. I have a feeling you will feel the same way, once you try it. Recipe: 1 cup raw cashews 2 cups water 1 red bell pepper 3 tablespoons nutritional yeast flakes 2 teaspoons onion powder 1 1/2 teaspoons salt 1/2 teaspoon garlic powder Directions: Place all ingredients in the blender and blend until it is completely smooth, about 5-7 minutes. Benefits of Cashews: They are a good source of protein, B1, B2, and magnesium. Magnesium helps with nervousness, irritability, depression, weakness, and abnormal tiredness. Benefits of Red Bell Peppers: They are high in vitamin A & C. They contain lycopene, which is a potent antioxidant that protects against cancerous degeneration of cells, especially that of the stomach and colon cancers. They also help to stimulate digestion.   • Vegan Chocolate Chip Cookies

    It's cookie time! My husband's favorite dessert is cookies. Any type of cookies really, so I have to have a good recipe that will suffice his sweet cravings. These chocolate chip cookies hit the spot perfectly. In most cookie recipes you will find that the dry ingredients gets mixed together and then the wet ingredients is added to it later. I do it a little different. My first step is to mix the dairy-free butter with the flour. This helps the butter to be in every bit of the cookie, which makes them so soft and chewy. When I was little a friend of my parents would always bring over chocolate chip cookies that were absolutely amazing, and the best we had ever had. Sorry, mom, but you know Brian's cookies were the best. For years he would never let us in on his secret of what made his cookies so good. Finally, somehow my mom got it out of him that he would mix the butter with the flour first. That's what made them different and so yummy. So now I'm sharing my vegan version of the best chocolate chip cookies. Recipe: 2 1/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 cup dairy-free butter, softened 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 teaspoon vanilla extract 2 Tablespoons ground flaxseed 6 Tablespoons water 2 cups (12-oz. pkg.) dairy-free chocolate chips 1 cup chopped nuts (optional) Directions: Preheat oven to 375° F. In a large mixing bowl, combine the flour and butter and beat together until it is a fine meal texture. Add the baking soda, salt, sugar, and brown sugar and mix together. In a small bowl add the ground flaxseed and water and stir together. Let it set for about 3 minutes. Add the vanilla and flax mixture into the dry ingredients mixture, and mix well. Stir in chocolate chips and nuts, if you are using them. Using a spoon or a cookie scoop and drop onto a lined baking sheet. Bake for 9-11 minutes or until they are golden brown. Remove from oven and cool on the baking sheet for 1-2 minutes, then transfer to a wire rack to cool completely. *If you only want to bake half of the dough at a time, store the dough in a air tight container in the freezer for up to 8 weeks. This recipe makes about 4 dozen cookies (48 cookies), so if you're not wanting to have 48 cookies in your house at one time, just freeze the dough! When I make these cookies I will bake about half the recipe and put the rest of the dough in tupperware, and use it within eight weeks. It's perfect for when you get a sweet craving and just want one or two cookies. Just scoop them out and bake away!
