As we should all be aware, these are not to be eaten on a daily basis. Special occasions are a great time to enjoy these sweet treats.
Recipe:
Dough
1/4 oz. package yeast
1/2 cup warm water
1/2 cup warm dairy-free milk
1/4 cup sugar
1/3 cup butter
1 teaspoon salt
1 tablespoon ground flaxseed + 3 tablespoons water
2 cups whole wheat pastry flour
2 cups all-purpose flour
Filling:
1/2 cup dairy-free butter, melted
1/2 cup brown sugar
1 tablespoon + 1 teaspoon cinnamon
3/4 cup walnuts, chopped
Glaze:
4 tablespoons dairy-free butter
2 cups powdered sugar
1 teaspoon vanilla
3-6 tablespoons hot water
Directions:
Dissolve water and yeast in a small bowl, and let it sit for about 5 minutes, or until yeast bubbles. In a large bowl add the dairy-free milk, sugar, dairy-free butter, salt, flax and water. Add 1 cup whole wheat pastry flour and 1 cup all purpose flour, and mix well. Add the yeast slush, and slowly add the rest of the flour, while kneading the dough. Knead for 5-10 minutes. Place the dough in a oiled bowl and cover for 1-1 1/2 hours for it it rise and double in size.
While the dough is rising, melt 1/2 cup butter. In a small bowl combine the brown sugar and cinnamon. Set this aside for the filling of the cinnamon rolls.
Preheat oven to 350 degrees. Punch down the dough and then place it on a well floured surface, and begin to roll out the dough. Roll out to about 18 X 14 inches. Place about 3 tablespoons of the melted butter onto the dough, then sprinkle of the brown sugar and cinnamon combination. Spread evenly throughout the dough. Reserve some for the bottom of the pan. Sprinkle the chopped walnuts evenly over the dough. Starting at the long side, tightly roll up the dough, pinching the seam to seal. Brush a little butter on the seam to help seal it up. Cut the roll into about 12-15 pieces with a serrated knife.
In a pan place some melted butter and sprinkle the rest of the brown sugar and cinnamon mixture to the bottom of the pan. Place the rolls into the pan, and bake for 25-30 minutes or until browned.
In a bowl mix together the ingredients for the glaze. Allow rolls to cool for 5-7 minutes before adding the glaze to the top of the rolls.
