Broccoli cheese soup is a classic comfort food, but traditional recipes often rely on dairy and oil, which can be heavy and less suitable for those following a plant-based or oil-free diet. This recipe offers a creamy, flavorful alternative that uses wholesome plant-based ingredients without any added oil. It’s perfect for anyone looking to enjoy a warm, satisfying soup that supports health and wellness.

Ingredients:
4 cups fresh broccoli florets, chopped
1 medium onion, diced
3 cloves garlic, minced
1 large carrot, peeled and diced
1 large potato, peeled and diced (for creaminess)
1 cup raw cashews, soaked for at least 1 hours in hot water
4 cups vegetable broth (low sodium preferred)
1/4 cup nutritional yeast (for cheesy flavor)
1 tablespoon lemon juice
1 teaspoon smoked paprika
1/2 teaspoon turmeric (for color and health benefits)
Salt to taste '
Water as needed for consistency
Directions:
Step 1: Prepare the vegetables
Start by washing and chopping the broccoli, onion, carrot, and potato. Set aside about 1½ cups of the broccoli florets for later so the finished soup has tender broccoli pieces. Soak the cashews in water for at least 4 hours or overnight (or in hot water for 30 minutes) until softened.
Step 2: Cook the vegetables
In a large pot, add the onion, garlic, carrot, potato, and the remaining broccoli (not the reserved florets) along with the vegetable broth. Bring to a gentle boil, then reduce the heat and simmer for 12 to 15 minutes, until all the vegetables are very tender.
Step 3: Blend until creamy
Transfer the cooked vegetables, broth, and drained cashews to a high-speed blender. Blend until completely smooth and velvety. Add a splash of water or additional broth if needed to reach your desired consistency.
Step 4: Finish the soup
Pour the blended soup back into the pot. Stir in the nutritional yeast, lemon juice, smoked paprika, turmeric, and salt.
Add the reserved broccoli florets and simmer for 5 to 7 minutes, or until they're bright green and fork-tender while still holding their shape.
Taste and adjust the seasoning as needed.
Step 5: Serve
Ladle into bowls and garnish with freshly cracked black pepper, chopped chives or parsley, and extra nutritional yeast if desired. Serve warm with crusty bread or your favorite crackers.
Tips for Perfect Soup Every Time
Soaking cashews is essential for a creamy texture. Soak them in hot water for 1 hour.
Nutritional yeast adds a cheesy flavor without dairy. Adjust the amount to suit your taste.
Use fresh or frozen broccoli depending on availability. Frozen works well and is convenient.
For extra depth, add a splash of soy sauce or tamari before serving.

Broccoli
Broccoli is a cruciferous vegetable rich in vitamins C, K, and A. It contains antioxidants and fiber that support immune function and digestive health. Research shows that compounds in broccoli may help reduce inflammation and support heart health.
Cashews
Cashews provide healthy fats, protein, and minerals like magnesium and zinc. They contribute to heart health and help maintain healthy bones. Soaking cashews improves digestibility and makes their nutrients more available.
Nutritional Yeast
Nutritional yeast is a deactivated yeast rich in B vitamins, including B12 when fortified. It adds a cheesy flavor and supports energy metabolism and nervous system health.

Turmeric
Turmeric contains curcumin, a compound with antioxidant and anti-inflammatory effects. Adding turmeric enhances the soup’s color and provides potential health benefits.
Why Choose Oil-Free Plant-Based Soups?
Many traditional soup recipes use oil to sauté vegetables or add richness. This recipe skips oil entirely, relying on the natural creaminess of cashews and potatoes. Avoiding oil can reduce calorie density and saturated fat intake, which supports heart health.
Plant-based diets rich in vegetables, legumes, nuts, and whole grains have been linked to lower risks of chronic diseases such as diabetes, hypertension, and certain cancers. This soup fits well into such a diet, offering comfort without compromising nutrition.
