This version of street corn salad is intentionally crafted to feel indulgent and layered while remaining oil-free and plant-based. The richness comes from roasted corn, blended cashews, citrus, spices, and technique—not added fats. Roasting the corn on the cob is the heart of this dish, creating natural caramelization and smoky depth that carries the entire salad without needing oil.

Ingredients (Serves 4–6)
Roasted Corn Base
6 ears fresh corn, husks removed
¾ teaspoon sea salt
1 teaspoon smoked paprika
½ teaspoon regular paprika
½ teaspoon chili powder

Instructions
1. Roast the Corn on the Cob (No Oil Needed)
Preheat your oven to 425°F (220°C) or prepare a grill over medium-high heat.
Place the husked corn directly on a baking sheet or grill grates. Sprinkle evenly with sea salt, smoked paprika, regular paprika, and chili powder. Use your hands to gently rub the spices onto the corn—natural moisture is enough to help them adhere.
Roast for 30–35 minutes, turning every 8–10 minutes, until the kernels are deeply golden with charred spots. The corn should smell sweet and smoky, with visible caramelization.
Remove from heat and allow the corn to cool slightly. Stand each cob upright and carefully slice the kernels off with a sharp knife, collecting all juices and browned bits—these carry major flavor.
2. Blend the Creamy Oil-Free Dressing
Drain the soaked cashews and add them to a high-speed blender with lime juice, nutritional yeast, garlic powder, onion powder, smoked paprika, sea salt, and water.
Blend until completely smooth and velvety. The dressing should be thick but pourable, similar to a crema. Adjust water gradually to reach your preferred consistency.

3. Assemble the Salad
