Easy Overnight Muesli | 5-Minute Plant-Based Breakfast
Updated: Sep 23
Some mornings call for a breakfast that’s already waiting for you.
This easy overnight muesli takes just 5 minutes to prepare the night before. In the morning, all you have to do is grab it from the refrigerator, add fresh banana, and enjoy.
It’s creamy, naturally sweet, full of fresh fruit, and has just the right amount of crunch from the nuts. Best of all, there’s no cooking required.
If you love overnight oats, think of this as their fruitier, crunchier cousin.
Why You'll Love This Muesli
I love recipes that make healthy eating feel simple, and this is one of them.
Oats provide whole grains and fiber, while soy milk and nuts add plant-based protein and healthy fats. Apples and grapes bring natural sweetness and even more fiber, and fresh banana added right before serving makes the finished bowl creamy and naturally sweet.
It’s an easy combination of whole grains, fruit, plant protein, fiber, and healthy fats in one bowl.
And because most of the work happens the night before, it’s especially convenient for busy mornings.
Easy Overnight Muesli
Prep Time: 5 minutesChill Time: Several hours or overnightServings: 2
Ingredients
1 cup old-fashioned oats
1 cup coconut milk
1 cup soy milk
2 tablespoons agave nectar
Pinch of salt
1½ ounces chopped walnuts or mixed nuts
½ apple, chopped
½ cup grapes, halved
1 banana, sliced, added just before serving
Instructions
In a medium bowl, combine the oats, coconut milk, soy milk, agave nectar, and salt. Stir until well combined.
Add the chopped nuts, apple, and grapes and gently stir everything together.
Cover and refrigerate for several hours or overnight. As the muesli rests, the oats soften and absorb some of the milk, creating a creamy texture without any cooking.
When you’re ready to eat, give the muesli a good stir. If you prefer a thinner consistency, add a splash of plant-based milk.
Slice the banana and add it just before serving.
Enjoy cold straight from the refrigerator.

Kylee's Tip 🍌
Don't add the banana the night before.
Once sliced, bananas begin to brown fairly quickly. Waiting until you're ready to eat keeps the banana fresh, bright, and much more appetizing.
If you're preparing individual portions to take with you, simply pack the banana separately and slice it when you're ready for breakfast.
Why Oats Are Such a Great Breakfast Staple
Oats are an easy and affordable whole grain and a great way to add more fiber to your day.
They contain a type of soluble fiber called beta-glucan, which has been studied for its role in supporting healthy cholesterol levels and heart health.
Adding fruit increases the fiber even more, while nuts contribute healthy unsaturated fats and plant-based protein.
The result is a breakfast that doesn't just taste good. It brings several nutrient-dense plant foods together in one simple meal.

Make It Your Own
One of the best things about muesli is how easy it is to customize.
Try strawberries, blueberries, raspberries, peaches, or pears in place of the grapes or apples. Walnuts, almonds, and pecans all work well for the nuts.
You can also add cinnamon, chia seeds, ground flaxseed, or a small spoonful of nut butter.
Just remember that changing the ingredients will also change the nutrition information.
Meal Prep Tip
Make the oat mixture the night before and divide it between individual containers.
In the morning, grab one from the refrigerator and add your freshly sliced banana.
For several days of meal prep, I recommend keeping the fruit that browns easily, especially bananas, separate until you're ready to eat.
