Ingredients


Pistachio Streusel


  • ½ cup (70 g) shelled unsalted pistachios

  • ½ cup (60 g) all-purpose flour

  • ⅓ cup (65 g) packed light brown sugar

  • ½ teaspoon ground cinnamon

  • Pinch of fine sea salt

  • 4 tablespoons (56 g) vegan butter, melted


Homemade Pistachio Filling

  • ¾ cup (105 g) shelled unsalted pistachios

  • 2 tablespoons (25 g) granulated sugar

  • 2 tablespoons unsweetened soy milk

  • 1 tablespoon (14 g) melted vegan butter

  • ½ teaspoon vanilla extract

  • Pinch of fine sea salt

Cake


  • 1 cup (240 ml) unsweetened soy milk

  • 1 tablespoon apple cider vinegar

  • 2 cups (250 g) all-purpose flour

  • 1 cup (120 g) finely ground shelled pistachios

  • 1 cup (200 g) granulated sugar

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon fine sea salt

  • ½ cup (120 ml) neutral oil, such as avocado or canola

  • 1 teaspoon vanilla extract

  • ¼ teaspoon almond extract


Instructions


Prepare the Oven


Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan and line it with parchment paper, leaving an overhang for easy removal.


Make the Streusel


Place the pistachios in a food processor and pulse until they resemble coarse crumbs. Transfer to a bowl and stir in the flour, brown sugar, cinnamon, and salt. Add the melted vegan butter and mix until evenly moistened and crumbly. Refrigerate while preparing the remaining ingredients.


Make the Pistachio Filling


Add the pistachios and sugar to a food processor or high-speed blender and process until finely ground. Add the soy milk, melted vegan butter, vanilla, and salt. Blend until thick, smooth, and spreadable. If needed, add an extra teaspoon of soy milk to loosen the mixture slightly.


Make the Cake Batter


In a measuring cup, combine the soy milk and apple cider vinegar. Let sit for 5 minutes to create a vegan buttermilk.


In a large mixing bowl, whisk together the flour, ground pistachios, sugar, baking powder, baking soda, and salt.


Pour in the oil, vanilla, almond extract, and vegan buttermilk. Fold the batter together just until no dry flour remains. Avoid overmixing.


Assemble the Cake


Spread half of the batter evenly into the prepared baking pan.


Spoon the pistachio filling over the batter in small dollops, then gently swirl it with a butter knife.


Carefully spread the remaining batter over the filling and smooth the top.


Sprinkle the chilled streusel evenly over the surface.


Bake


Bake for 40 to 50 minutes, or until the streusel is golden brown and a toothpick inserted into the center comes out clean or with only a few moist crumbs attached.


Allow the cake to cool in the pan for about 20 minutes before lifting it out using the parchment paper. Slice and serve slightly warm or at room temperature.


Top with sifted powdered sugar and pistachio streusel for an elegant touch.




Baker's Tips


  • Grind the pistachios only until they resemble almond flour. Over-processing will turn them into pistachio butter.

  • Soy milk produces the best texture because of its higher protein content, but unsweetened oat milk may also be used.

  • For the brightest green color, use fresh, vibrant pistachios.
