Strawberry Banana Baked Oatmeal
Servings: 6
Prep Time: 10 minutes
Cook Time: 35–40 minutes
Total Time: 45–50 minutes
Ingredients
2 cups old-fashioned rolled oats
2 medium ripe bananas, mashed (about 1 cup)
1 3/4 cups unsweetened soy milk or oat milk
2 tablespoons chia seeds
2 tablespoons pure maple syrup
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups fresh strawberries, chopped, divided
1/3 cup chopped walnuts or pecans (optional)
Add a few chocolate chips (optional)
Instructions
Preheat the oven. Preheat your oven to 350°F (175°C). Lightly grease an 8 × 8-inch baking dish or line it with parchment paper.
Mash the bananas. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth.
Combine the wet ingredients. Add the plant-based milk, chia seeds, maple syrup, and vanilla extract to the mashed bananas. Stir until well combined.
Add the dry ingredients. Stir in the rolled oats, cinnamon, baking powder, and salt until evenly incorporated.
Fold in the strawberries. Gently fold in 1 cup of the chopped strawberries and the optional nuts.
Transfer to the baking dish. Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the remaining 1/2 cup strawberries over the top, pressing them gently into the oatmeal.
Bake. Bake for 35–40 minutes, or until the center is set and the edges are lightly golden.
Cool and serve. Allow the baked oatmeal to cool for 5–10 minutes before slicing into six portions. Serve warm, with a splash of plant-based milk or a spoonful of dairy-free yogurt if desired.

Helpful Tips for the Best Baked Oatmeal
Use ripe bananas. The riper your bananas, the sweeter and more flavorful your baked oatmeal will be. Bananas with plenty of brown spots work especially well.
Choose old-fashioned rolled oats. They provide the best texture for baked oatmeal. Quick oats can make the finished dish softer, while steel-cut oats require a different liquid ratio and cooking time.
Use fresh or frozen strawberries. Fresh strawberries work beautifully, but frozen strawberries can also be used. If using frozen, add them directly without thawing. You may need a few additional minutes of baking time.
Let it rest before slicing. Allowing the baked oatmeal to cool slightly helps it firm up, making it easier to cut into squares.
Adjust the sweetness. If your bananas are very ripe, you may find the maple syrup unnecessary. You can reduce or omit it depending on your preference.
Easy Variations
Strawberry Almond: Replace the walnuts with sliced almonds and add 1/4 teaspoon almond extract.
Mixed Berry: Replace half the strawberries with blueberries or raspberries.
Peanut Butter Banana: Swirl 2 tablespoons of natural peanut butter into the mixture before baking.
Chocolate Strawberry: Add 1/4 cup dairy-free chocolate chips for an occasional sweet breakfast treat.
Higher-Protein Version: Use unsweetened soy milk and serve with plain, high-protein plant-based yogurt.
How to Store and Reheat
Refrigerator: Store leftover baked oatmeal in an airtight container for up to 4 days.
Freezer: Cut into individual portions, wrap well, and freeze for up to 2 months.
To reheat: Microwave individual portions for approximately 45–90 seconds, or until heated through. Add a splash of plant-based milk to keep the oatmeal moist.
For a convenient breakfast, portion the baked oatmeal into individual containers so it's ready to grab throughout the week.
